The Golden Cupcake


I made this Giant Cupcake Cake for my mother's 71st birthday. I thought it was appropriate to go with a "golden" theme. The cake is coconut flavored made with coconut milk and coconut flakes. The cake was cut in half and filled with ginger-mango glaze. The rest of the glaze was used on top with toasted coconut flakes and royal icing roses.

Princess Cupcake CAKE

I made this using Wilton's Giant Cupcake Pan & Disney's Princess Castle Decoration. The decoration was meant for a square cake but after some alterations... it fit perfectly! You can't really tell that it's a Giant Cupcake but I like how it gave the cake a more cartoon-like look.

A touch of Disney Magic!


This cute little theme was thought up by Michelle for her 6 year old son. The choice flavor? Cookies 'N Cream. The ears were made with waffle cookie sandwiches with a dark chocolate filling. Buttons were made with Nilla wafers covered in whipped frosting. Michelle's son will be enjoying this year's birthday at the happiest place on Earth! Have fun at Disneyland!
The cake was made with Wilton's Giant Cupcake pan and I have to admit, it was quite a process. Here's why, the bottom portion of the pan uses 6 cups of batter and the top portion only uses about 3 & 1/2 cups of batter. So in order for this cupcake to work out, I baked the two portions separately. I'm really curious as to why Wilton didn't make the pieces separate. That would've been so much more easier and time efficient. =(
