Go Coconut Crazy!

My most recent order was for a set of Red Velvet mini cupcakes topped with cream cheese frosting and toasted coconut flakes. I have to confess that I was a skeptic to my own design and had my doubts about the combination of flavors...BUT I was thrillfully surprised! Coconut can be most overpowering, yet used in the right proportion can give you the most delicious effect.

Coconut flakes are very moist and tend to be a bit oily. Toasting the flakes will relieve some of the moisture, giving the flakes a firmer body and more color. I gave the flakes a sprinkle of powder sugar to finish the look and to give the flakes a sweeter candied taste.


From this same order, I was requested to "copycat" a green coconut cake found locally at Van's Bakery. I've only tried the actual cake once and was never really taken in by it. The cake tended to be dry and spongey, while the coconut flavor lacked character and fell flat. For these cupcakes, I decided to use coconut milk, which contains a good amount of natural fat to help add moisture and a soft structure to the cake. The milk is creamy in texture and flourished with aroma, bringing warmth and dynamics to the overall flavor.

To make the green coconut flakes, I diluted a couple drops of green food coloring in about 1 teaspoon of water and then mixed it with the coconut flakes in a ziplock bag. To evaporate some of the added moisture, lightly toast the flakes. The cupcakes were then topped with a light fluffy frosting, garnished with pink heart quins and set in powdered sugar. To be honest, I'm not a fan of coconut flavored anything but these little green minis turned out to be very fun in flavor and color.

AUTOBOTS ROLL OUT!!

Transformer cupcakes!!! These were especially made for opening night of Transformers: Revenge of the Fallen. I call these the "Bumble Bee" for its obvious yellow and black color scheme. Pretty in pink

The Imperial cupcake was sent back to the kitchen to get re-dressed. I decided to keep the cute pink frosting but updated the look with a cute yellow flower and new wrapper. The original Imperial Cupcake* were just a slight bit more contrasting but I wanted to bring a more softer look to the cupcake.

Lychee flavored. The cake is made using apple sauce with chopped bits of lychee baked right in. The cake is tender, sweet and topped with whipped frosting.

The New Look of Very Cherry

Very Cherry just got a face lift! It's been 1 year since I've made these beauties. The original Very Cherry was simple and very pink. Now that Rainer cherries are semi "in-season" at $8 per pound, I'd thought I might give the cupcake a new spring look.

Cherry flavor cupcakes! A piece of cherry in every bite! These are made with fresh Rainer cherries, fresh Bing Cherries & maraschino cherries with homemade apple sauce (Pink Lady). Topped with Mascarpone cheese frosting. Enjoy!

I Heart Dessert Crepes!

These cupcakes were inspired by the dessert crepes served at Genki Living. The crepes are made fresh to order with many combinations. My favorite style is a crispy crepe spread generously with nutella, vanilla ice cream & strawberries. Then topped with whip cream & chocolate syrup. I simply could not resist mimicking such a delicious treat.

The Black Pearl

Has a little Pirates of the Caribbean ring, doesn't it? The blackberry is known as the "cabernet" of berries for its earthy, wine-like taste. I found it over all to be subtle and humble in taste but beautiful in color. The cupcake below features a rich chocolate cupcake topped with blackberry buttercream, garnished with edible white pearls and a blackberry.

No One Cries For The Wicked

On the 10th, I had an opportunity to watch "Wicked" the musical and it is hands down fantastic! I'm planning to go back next month, taking several members of my family.

Asian Persuasion!

The Imperial Cupcake - Lychee flavored. The cake is made using homemade Pink Lady apple sauce with chopped bits of lychee baked right in. The cake is tender, sweet and has slight tartness to it. Pink lychee whipped frosting is used to complete the taste and to top it of, a green tea wafer.
